Let's get down to business !
Cookie dough is one of the first pastries we make, easy and fun to bake. With endless possibilities of flavors !
What's important here :
- Butter : Make sure to use a real butter (I mean, no vegetable margarine, coming from oil) . Fat is what sets flavors. Using a quality butter will ensure a cookie with solid taste. I recommend using le beurre d’Isigny. It usually has quite a good value for money.
- Sugar / Brown Sugar : Can we replace the brown sugar if we don't have it ? The answer is NOOOO (well, technically yes, but it really won't be as good). And you can't use brown sugar only either. White sugar is here to make our cookies sweet while brown sugar brings a flavor standard sugar doesn't have. Skip either one and you'll have a too sweet cookie or a tasteless one !
- Salt : Here to lift things up.
- Chocolate Chips : They're totally optional. You can use white ones, milk ones, hazelnuts, almonds, any-thing you wish.
For 30 cookies of 30g each

Baking Powder | 12 g | 0.42 oz | 1 Tsp |
Flour | 600 g | 21.1 oz | 5 cups |
Now, let's start !
Weigh the soft butter with the 2 type of sugars and salt in a big bowl. I'm using a robot to bake. If you don't have one, don't worry, you can do everything with your hands ! Mix it until all sugars are mixed with the butter. |

Add the eggs and mix until it's homogeneous. Don't skip this step, the dough needs to be homogeneous before you go to the next step. | |
Add Chocolate chips and mix it until it's homogeneous. | |
Weigh the baking powder WITH the flour and then add it together to the dough. Once again, mix it. | |
You sould get this. Wrap it around a clingfilm and store it in the fridge for at least 4hours. It's best to let it rest for the night. |

Bake it in an oven at 170°C (338°F) Just leave it between 5 and 15minutes depending on how you like them. (5minutes is really undercooked and 15minutes makes them crispy) |
And now, you can do whatever you want with this dough. You can add it to your ice cream, bake it in the oven to get delicious cookies, make them big, thin, undercooked or crispy.
It's just as you like.
But I can't leave you without showing what I do most of the time :
I bake them in the oven (170°C, 8minutes) with a brownie in the center ! It's SO YUMMY
Bonus :
